Ingredients (Serves 2)

Red Lentils160 g
Onion150 g
Carrot150 g
Celery100 g
Pumpkin200 g
Vegetable Broth800 ml
Olive Oil20 ml
Garlic10 g
Bay Leaf2 g
Thyme2 g
Salt4 g
Black Pepper2 g

Instructions

Wash and drain the red lentils.

Finely chop the onion, carrot, and celery (this takes about 6 minutes).

Peel and dice the pumpkin into small cubes (this takes about 3 minutes).

Mince the garlic (this takes about 1 minute).

Heat the olive oil in a pot over medium heat. Add the chopped onion, carrot, and celery and sauté until softened (this takes about 5 minutes).

Add the minced garlic and cook for another minute until fragrant.

Stir in the red lentils, diced pumpkin, vegetable broth, bay leaf, and thyme.

Bring the soup to a boil, then reduce heat to low, cover, and simmer until the lentils are tender and the pumpkin is soft (this takes about 15 minutes).

Remove the bay leaf. Season with salt and black pepper to taste (this takes about 3 minutes).
