Carefully clean the Halal beef brain by removing any visible membranes or blood vessels. Blanch the brain by briefly submerging it in simmering salted water for 2 minutes, then immediately transfer to an ice bath to stop the cooking process. This firms it up for easier handling.

Gently pat the blanched brain thoroughly dry and roughly chop it into small, uniform pieces. Season the chopped brain with salt.

Heat a heavy-bottomed skillet over medium-high heat. Add 5g of ghee to the pan.

Form small, flat fritters from the chopped brain mixture. Carefully place them into the hot ghee, ensuring not to overcrowd the pan (cook in batches if necessary). Fry for 4-5 minutes per side until they are golden brown and have a crispy exterior.

While the fritters are cooking, extract the marrow from the beef marrow bone. If it's not pre-rendered, you may need to roast it for 10-15 minutes at 180°C (350°F) first to soften it.
