Ground Turkey and Corn Stuffed Bell Peppers

Ingredients (Serves 1)

Bell Peppers200 g
Ground Turkey180 g
Corn80 g
Onion50 g
Garlic5 g
Tomatoes100 g
Rice50 g
Chicken Broth100 ml
Cumin2 g
Chili Powder2 g
Oregano1 g
Salt1 g
Pepper0.5 g
Cheese20 g
Oil5 ml

Instructions

Preheat oven to 190°C. Cook rice according to package directions if not pre-cooked (e.g., 15-20 minutes for white rice) (15 minutes).

Cut the tops off the bell peppers and remove seeds and membranes. Place peppers cut-side up in a small baking dish (3 minutes).

Finely chop the onion and mince the garlic (4 minutes). Dice the tomatoes (4 minutes).

Heat oil in a large pan over medium-high heat. Add ground turkey and cook, breaking it up, until browned (5 minutes).

Drain excess fat. Add chopped onion and minced garlic and cook for 3 minutes until softened (3 minutes).

Stir in diced tomatoes, corn, cumin, chili powder, oregano, salt, and pepper. Pour in chicken broth (1 minute).

Bring to a simmer, then stir in the cooked rice. Cook for 2-3 minutes until slightly thickened (3 minutes).

Spoon the turkey and rice mixture evenly into the prepared bell peppers (3 minutes).

Add a splash of water or broth to the bottom of the baking dish (about 30ml). Cover the dish with foil.

Bake for 20-25 minutes, or until peppers are tender (25 minutes).

Remove foil, sprinkle cheese (if using) over the tops of the peppers, and bake for another 5 minutes until cheese is melted and bubbly (5 minutes).
