Instructions

Preheat oven to 190°C. Cook rice according to package directions if not pre-cooked (e.g., 15-20 minutes for white rice) (15 minutes).

Cut the tops off the bell peppers and remove seeds and membranes. Place peppers cut-side up in a small baking dish (3 minutes).

Finely chop the onion and mince the garlic (4 minutes). Dice the tomatoes (4 minutes).

Heat oil in a large pan over medium-high heat. Add ground turkey and cook, breaking it up, until browned (5 minutes).
