- Quinoa80 g
- Bell Pepper100 g
- Cherry Tomato100 g
- Garlic Powder0.5 tsp
- Bell Pepper100 g
- Olive Oil11.3 ml
- Dried Oregano0.5 tsp
- Salt1 pinch
- Black Pepper1 pinch
- Turkey Breast250 g
- Zucchini150 g
Instructions
- 1Step 1
Preheat oven to 200°C (400°F). Cook quinoa according to package directions. (Approx. 15 minutes simmer time).

Dice zucchini and bell pepper into 1-inch pieces. Halve cherry tomatoes. In a bowl, toss vegetables with 7.5ml of olive oil, garlic powder, salt, and pepper.

Spread vegetables on a baking sheet and roast for 15 minutes, or until tender-crisp.

While vegetables roast, season turkey breast with salt, pepper, and oregano.

Heat remaining 3.75ml olive oil in a grill pan or cast-iron skillet over medium-high heat. Grill turkey breast for 6-8 minutes per side, or until cooked through and internal temperature reaches 74°C (165°F).
