Instructions

Step 1: Pat chicken breasts dry. Season with salt, pepper, and garlic powder. Heat a grill pan or outdoor grill to medium-high.

Step 2: Grill chicken breasts for 5-7 minutes per side, or until cooked through and internal temperature reaches 74°C (165°F). Let rest for 5 minutes, then slice.

Step 3: While chicken cooks, prepare the salad: Wash and thoroughly dry mixed greens. Thinly slice radishes and spring onion. Dice cucumber and avocado.

Step 4: For the vinaigrette, whisk together olive oil, lemon juice, Dijon mustard, chopped fresh parsley, salt, and pepper in a small bowl.
