Grilled Chicken Salad with Asparagus and Radishes

Asparagus150 g
Radish75 g
Mixed Greens150 g
Olive Oil22.5 ml
Lemon Juice22.5 ml
Dijon Mustard7.5 g
Fresh Dill5 g
Salt2 g
Black Pepper1 g

Instructions

Step 1: Pat chicken breasts dry and season with salt and pepper. Heat a grill pan or outdoor grill to medium-high heat.

Step 2: Grill chicken for 5-7 minutes per side, or until cooked through and internal temperature reaches 74°C (165°F). Let rest for 5 minutes, then slice.

Step 3: While chicken cooks, bring a small pot of salted water to a boil. Blanch asparagus for 2-3 minutes until tender-crisp. Drain and immediately plunge into ice water to stop cooking, then drain again.

Step 4: Thinly slice radishes. In a large bowl, combine mixed greens, blanched asparagus, and sliced radishes.

Step 5: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, and chopped fresh dill. Season with salt and pepper to taste.

Step 6: Add sliced chicken to the salad. Drizzle with the dressing and toss gently to combine. Serve immediately.
