Ingredients (Serves 1)

Chicken Breast200 g
Green Lentils150 g
Mixed Greens100 g
Cucumber100 g
Cherry Tomatoes100 g
Bell Pepper100 g
Olive Oil1.5 tbsp
Apple Cider Vinegar1 tbsp
Dijon Mustard1 tsp
Dried Oregano1 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

If using dry lentils, cook them according to package directions. If using canned, rinse thoroughly.

Season the chicken breast with salt and pepper. Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 5-7 minutes per side, or until fully cooked through. Let rest for a few minutes, then slice.

While chicken cooks, wash and chop the mixed greens, cucumber, cherry tomatoes, and bell pepper.

In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, dried oregano, salt, and black pepper to make the dressing.

Combine the mixed greens, chopped vegetables, and cooked lentils in a large bowl. Add the sliced grilled chicken.

Pour the dressing over the salad and toss gently to coat. Serve immediately.
