Bell Pepper97 g

Black Pepper1 pinch

Instructions

Step 1: Pat chicken breast dry and season with salt and pepper. Slice bell pepper and red onion into thin strips. Dice avocado. Rinse black beans and corn thoroughly under cold water.

Step 2: Heat olive oil in a non-stick pan over medium-high heat. Add chicken breast and grill or pan-sear for 5-7 minutes per side, or until cooked through and lightly browned. Remove from pan and let rest, then slice into strips or dice.

Step 3: In a large bowl, combine the cooked chicken, rinsed black beans, corn, sliced bell pepper, diced red onion, and diced avocado.

Step 4: Squeeze the juice from the lime over the bowl. Add chopped cilantro, a pinch of salt, and black pepper. Toss gently to combine all ingredients.
