Greek Beef Keftedes with Lemon Orzo and Fresh Tomato-Cucumber-Feta Salad

Ingredients (Serves 1)

Ground Beef380 g
Orzo90 g
Feta Cheese70 g
Tomato150 g
Cucumber150 g
Red Onion30 g
Olive Oil20 ml
Mint8 g
Parsley8 g
Garlic2 clove
Breadcrumb10 g
Egg1 whole
Lemon1 whole
Oregano0.5 tsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

For the Keftedes: In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic (1 clove), finely chopped mint and parsley (half of each), oregano, salt, and black pepper. Mix thoroughly until well combined.

Form the mixture into small, bite-sized meatballs (about 1.5 cm diameter). You should get about 15-20 meatballs.

Heat 10ml of olive oil in a large non-stick skillet over medium-high heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.

For the Lemon Orzo: While meatballs are cooking, bring a pot of salted water to a boil. Add the orzo and cook according to package instructions (usually 8-10 minutes) until al dente. Drain well.

Return the drained orzo to the pot. Add the juice of half a lemon and a drizzle of 5ml olive oil. Stir to combine.

For the Salad: Dice the tomato, cucumber, and red onion. Crumble the feta cheese.

In a medium bowl, combine diced tomato, cucumber, red onion, crumbled feta, remaining chopped mint and parsley, juice of the remaining half lemon, and 5ml olive oil. Toss gently to combine.

Serve the beef Keftedes alongside the lemon orzo and the fresh tomato-cucumber-feta salad.
