Ingredients
- Ground Beef380 g
- Tomato150 g
- Cucumber150 g
- Red Onion30 g
- Garlic2 clove
- Feta Cheese70 g
- Olive Oil20 ml
- Lemon1 whole
- Oregano0.5 tsp
- Salt0.5 tsp
- Black Pepper0.3 tsp
- Orzo90 g
- Mint8 g
- Parsley8 g
- Breadcrumb10 g
- Egg1 whole
Instructions

For the Keftedes: In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic (1 clove), finely chopped mint and parsley (half of each), oregano, salt, and black pepper. Mix thoroughly until well combined.

Form the mixture into small, bite-sized meatballs (about 1.5 cm diameter). You should get about 15-20 meatballs.

Heat 10ml of olive oil in a large non-stick skillet over medium-high heat. Add the meatballs and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through. Remove from skillet and set aside.

For the Lemon Orzo: While meatballs are cooking, bring a pot of salted water to a boil. Add the orzo and cook according to package instructions (usually 8-10 minutes) until al dente. Drain well.

Return the drained orzo to the pot. Add the juice of half a lemon and a drizzle of 5ml olive oil. Stir to combine.
