Ingredients (Serves 2)

Raw shrimp, peeled and deveined8 oz
Cooked rice1 cup
Frozen mixed vegetables2 cup
Medium onion0.3 pcs
Garlic cloves, minced1 pcs
Dairy-free soy sauce1 tbsp
Rice vinegar0.5 tbsp
Sesame oil0.5 tbsp
Olive oil1 tbsp
Ginger powder0.3 tsp
Garlic powder0.3 tsp
Salt0 taste
Black pepper0 taste

Instructions

Pat the shrimp dry with paper towels. Season with salt, pepper, garlic powder, and ginger powder.

Finely chop the onion and mince the garlic.

In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil. Set aside.

Heat olive oil in a large skillet or wok over medium-high heat.

Add the seasoned shrimp and cook for 2-3 minutes per side, just until pink and cooked through. Remove shrimp from the skillet and set aside.

Add the chopped onion and minced garlic to the skillet and cook until fragrant, about 1-2 minutes.

Add the frozen mixed vegetables to the skillet. Cook, stirring occasionally, until heated through and tender-crisp, about 5-7 minutes.

Return the cooked shrimp to the skillet.

Pour the prepared sauce over the shrimp and vegetables. Stir to coat and cook for 1-2 minutes until heated through.

Serve the stir-fry mixture immediately over the cooked rice.
