Garlic Herb Steak and Veggie Stir-fry with Rice

Ingredients (Serves 2)

Sirloin steak (raw weight)380 g
Broccoli florets200 g
Fresh spinach100 g
Bell pepper (any color)100 g
Onion80 g
Garlic4 cloves
Fresh rosemary sprig1 pc
Fresh thyme sprig1 pc
Olive oil15 ml
Salt0.5 tsp
Black pepper0.3 tsp
Cooked brown rice200 g

Instructions

Slice the sirloin steak thinly against the grain.

Mince the garlic. Chop the broccoli florets into bite-sized pieces. Dice the bell pepper and onion.

Heat half of the olive oil in a large skillet or wok over high heat.

Add the sliced steak and sear quickly for 2-3 minutes until browned on all sides. Remove steak from the pan and set aside.

Add the remaining olive oil to the skillet. Add the minced garlic, rosemary sprig, and thyme sprig. Cook for 30 seconds until fragrant.

Add the diced bell pepper, onion, and broccoli florets to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Return the seared steak to the skillet. Add the fresh spinach and stir-fry for 1-2 minutes until the spinach is wilted and the steak is heated through.

Season with salt and pepper to taste. Remove and discard the rosemary and thyme sprigs.

Serve the steak and vegetable stir-fry alongside the cooked brown rice.
