Garlic Herb Sirloin Steak with Roasted Broccoli and Quinoa

Ingredients (Serves 2)

Sirloin steak (raw weight)350 g
Broccoli florets400 g
Dry quinoa100 g
Water or vegetable broth200 ml
Olive oil15 ml
Garlic2 cloves
Fresh rosemary sprig1 pcs
Fresh thyme sprig1 pcs
Salt2 g
Black pepper1 g

Instructions

Pat the sirloin steak dry. Rub with half of the olive oil, salt, and pepper. If desired, you can let it sit at room temperature for 15-30 minutes.

Preheat oven to 200°C (400°F). Toss broccoli florets with the remaining olive oil, half of the minced garlic (reserve the other half), salt, and pepper. Spread on a baking sheet.

Roast broccoli for 20-25 minutes, or until tender and slightly browned.

While broccoli roasts, rinse quinoa under cold water. In a small saucepan, combine rinsed quinoa, water or vegetable broth, remaining minced garlic, rosemary sprig, and thyme sprig.

Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until liquid is absorbed.

Remove from heat, let stand covered for 5 minutes, then fluff with a fork. Remove herb sprigs.

Heat a heavy skillet (cast iron if possible) over medium-high heat until very hot.

Add the seasoned steak to the hot skillet. Sear for 3-5 minutes per side for medium-rare, adjusting time for desired doneness.

Remove steak from skillet, tent loosely with foil, and let rest for 5-10 minutes before slicing.

Slice steak against the grain. Serve sliced steak alongside roasted broccoli and fluffy quinoa.
