Ingredients (Serves 2)

Lean Beef (sirloin or flank steak), thinly sliced5.5 oz
Cooked Rice0.8 cup
Fresh Spinach, packed1.5 cup
Medium Onion, sliced0.3
Garlic, minced1.5 cloves
Olive Oil0.6 tbsp
Dairy-Free Soy Sauce0.8 tbsp
Rice Vinegar0.3 tbsp
Salt0.1 tsp
Black Pepper0.1 tsp

Instructions

Pat the thinly sliced beef dry with paper towels.

Heat olive oil in a large skillet or wok over high heat until shimmering.

Add beef in a single layer (cook in batches if necessary to avoid overcrowding). Cook quickly for 1-2 minutes per side until browned.

Remove beef from the skillet and set aside.

Reduce heat to medium. Add sliced onion and minced garlic to the skillet. Cook until onion is softened, about 3-4 minutes.

Add fresh spinach and cook, stirring, until wilted.

Return the cooked beef to the skillet.

In a small bowl, whisk together dairy-free soy sauce and rice vinegar. Pour over the beef and vegetables.
