Ingredients (Serves 2)

canned chickpeas, drained and rinsed400 g
lactose-free mayonnaise or vegan mayonnaise80 g
dijon mustard10 ml
celery, finely chopped50 g
red onion, finely chopped30 g
fresh dill or parsley, chopped5 g
lemon juice10 ml
salt2 g
black pepper1 g
large tortillas or wraps2 pcs
lettuce leaves (optional)20 g

Instructions

In a medium bowl, mash the drained chickpeas with a fork or potato masher, leaving some texture.

Add the lactose-free mayonnaise, dijon mustard, chopped celery, red onion, fresh herbs, lemon juice, salt, and pepper.

Stir until well combined.

Lay out the tortillas.

If using, place lettuce leaves on each tortilla.

Divide the chickpea mixture evenly between the two tortillas.
