Dairy-Free Beef and Vegetable Rice Bowl

Ingredients (Serves 2)

Extra-lean ground beef650 g
Dry rice150 g
Broccoli florets250 g
Carrots (sliced)120 g
Bell pepper (sliced)120 g
Onion (sliced)80 g
Garlic (minced)15 g
Oil (cooking)25 ml
Soy sauce or tamari50 ml
Cornstarch8 g
Water (for sauce)60 ml
Honey or maple syrup15 ml
Salt2 g
Black pepper1 g

Instructions

Cook the dry rice according to package instructions. Set aside.

While the rice cooks, prepare the vegetables: chop broccoli into florets, slice carrots, bell pepper, and onion. Mince the garlic.

In a large skillet or wok, heat the cooking oil over medium-high heat.

Add the extra-lean ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the sliced onion, bell pepper, and carrots to the skillet. Cook for 5-7 minutes until slightly softened.

Stir in the minced garlic and broccoli florets. Cook for another 3-5 minutes until broccoli is tender-crisp.

In a small bowl, whisk together the soy sauce or tamari, cornstarch, water, and honey or maple syrup. Season with salt and black pepper.

Pour the sauce mixture over the beef and vegetables in the skillet. Stir well to coat.

Bring the sauce to a simmer and cook for 1-2 minutes, stirring constantly, until thickened.

Serve the beef and vegetable mixture hot over the cooked rice.
