Dairy-Free Beef and Vegetable Pasta Bolognese

Ingredients (Serves 2)

Extra-lean ground beef500 g
Dry pasta220 g
Canned crushed tomatoes400 g
Onion150 g
Bell pepper200 g
Carrots100 g
Broccoli florets150 g
Garlic20 g
Olive oil15 ml
Dried oregano5 g
Dried basil5 g
Salt5 g
Black pepper3 g

Instructions

Finely chop the onion, bell pepper, and carrots. Mince the garlic. Roughly chop the broccoli florets.

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the chopped onion, bell pepper, carrots, and garlic to the pot. Cook, stirring occasionally, until the vegetables soften, about 8-10 minutes.

Stir in the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring the sauce to a simmer.

Reduce the heat to low, cover, and let the sauce simmer for at least 20-30 minutes to allow the flavors to meld. Stir occasionally.

While the sauce is simmering, cook the pasta according to package instructions in a separate pot of boiling, salted water.

Add the broccoli florets to the simmering sauce during the last 10 minutes of cooking.

Drain the cooked pasta.
