Creamy Garlic Shrimp & Vegetable Rice

Raw shrimp, peeled and deveined8 oz
Cooked rice0.8 cup
Medium onion, diced0.3 pcs
Frozen mixed vegetables0.8 cup
Garlic, minced1.5 cloves
Olive oil or dairy-free butter alternative1.3 tbsp
Unsweetened almond milk0.8 cup
Cornstarch0.5 tbsp
Salt0 to taste
Black pepper0 to taste

Instructions

Heat olive oil or dairy-free butter in a large skillet over medium-high heat.

Add diced onion and cook until softened, about 3-4 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.

Add mixed vegetables to the skillet and cook until heated through, about 3-5 minutes.

While vegetables cook, whisk together almond milk and cornstarch in a small bowl until smooth.

Pour the almond milk mixture into the skillet with the vegetables. Bring to a gentle simmer, stirring constantly, until the sauce thickens, about 2-3 minutes.

Return the cooked shrimp to the skillet. Stir to coat in the sauce.
