Creamy Dairy-Free Chicken and Vegetable Pasta

Ingredients (Serves 2)

Raw chicken breast310 g
Dry pasta70 g
Mixed stir-fry vegetables100 g
Onion40 g
Unsweetened oat milk287.5 ml
Olive oil17.5 ml
Garlic, minced8.5 g
Salt0 to taste
Black pepper0 to taste

Instructions

Bring a large pot of salted water to a boil for the pasta.

Cut the raw chicken breast into bite-sized pieces. Season with salt and pepper.

Heat olive oil in a large pan or skillet over medium-high heat.

Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the pan and set aside.

Add the chopped onion to the same pan and cook until softened, about 3-4 minutes.

Add the minced garlic and mixed stir-fry vegetables to the pan. Cook for 5-7 minutes until vegetables are tender-crisp.

While the vegetables cook, add the dry pasta to the boiling water and cook according to package directions until al dente. Reserve about 120ml of pasta water before draining.

Pour the unsweetened oat milk into the pan with the vegetables. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened.

Return the cooked chicken to the pan with the sauce and vegetables.

Add the cooked and drained pasta to the pan. Toss to coat everything in the creamy sauce. If the sauce is too thick, add a little reserved pasta water.

Season with additional salt and pepper to taste.
