Chicken Thigh235 g
New Potato185 g
Asparagus150 g
Olive Oil10 ml
Garlic Powder2.5 g
Paprika2.5 g
Rosemary1.5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Preheat oven to 200°C (390°F).

Wash and halve the new potatoes. Trim the woody ends off the asparagus.

In a bowl, toss the chicken thighs and potatoes with olive oil, garlic powder, paprika, rosemary, salt, and black pepper until evenly coated.

Spread the chicken and potatoes in a single layer on a baking sheet.

Roast for 10 minutes.

Add the asparagus to the baking sheet and toss with the pan juices/oil.

Continue roasting for another 8-10 minutes, or until chicken is cooked through (internal temp 74°C/165°F), potatoes are tender, and asparagus is vibrant green and slightly tender-crisp.

Serve immediately.
