Pat the halibut fillet dry with a paper towel. Season with salt, pepper, and a drizzle of 1 tbsp (approx. 14g) olive oil. Place on a small baking sheet lined with parchment paper.

Bake the halibut for 12-15 minutes, or until cooked through and flakes easily with a fork.

While the fish bakes, prepare the couscous: In a small saucepan, bring 160ml (double the couscous weight) of water to a boil. Add a pinch of salt and 1 tsp (approx. 3.5g) of olive oil. Stir in the whole wheat couscous, cover, remove from heat, and let stand for 5 minutes. Fluff with a fork.
