Mediterranean Baked Halibut with Lemon-Herb Couscous and Sautéed Green Beans

Halibut Fillet180 g
Whole Wheat Couscous80 g
Green Beans200 g
Lemon0.5 medium
Fresh Dill5 g
Fresh Parsley5 g
Olive Oil35 g
Garlic10 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Preheat oven to 200°C (400°F).

Pat the halibut fillet dry with a paper towel. Season with salt, pepper, and a drizzle of 1 tbsp (approx. 14g) olive oil. Place on a small baking sheet lined with parchment paper.

Bake the halibut for 12-15 minutes, or until cooked through and flakes easily with a fork.

While the fish bakes, prepare the couscous: In a small saucepan, bring 160ml (double the couscous weight) of water to a boil. Add a pinch of salt and 1 tsp (approx. 3.5g) of olive oil. Stir in the whole wheat couscous, cover, remove from heat, and let stand for 5 minutes. Fluff with a fork.

Finely chop the fresh dill and parsley. Mince the garlic.

In a separate skillet, heat 1.5 tbsp (approx. 17.5g) of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant (do not brown). Add the green beans and sauté for 5-7 minutes, stirring occasionally, until tender-crisp.

To the fluffed couscous, add the chopped fresh dill, parsley, and the juice from half a lemon. Stir to combine.

Serve the baked halibut alongside the lemon-herb couscous and sautéed green beans.
