Hearty Beef and Leek Soup

Ingredients (Serves 1)

Lean Beef170 g
Leek150 g
Potatoes150 g
Carrots50 g
Beef Broth300 ml
Olive Oil10 ml
Fresh Parsley5 g
Salt2 g
Black Pepper1 g

Instructions

Step 1: Cut the lean beef into small, bite-sized cubes. Wash and slice the white and light green parts of the leek. Peel and dice the potatoes and carrots.

Step 2: Heat olive oil in a medium pot or Dutch oven over medium-high heat. Add beef cubes and sear for 3-4 minutes until browned on all sides. Remove beef from the pot and set aside.

Step 3: Add sliced leek to the pot and sauté for 3-4 minutes until softened. Add diced potatoes and carrots, and cook for another 2 minutes, stirring.

Step 4: Return the beef to the pot. Pour in the beef broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, or until vegetables are tender and beef is cooked through.

Step 5: Season with salt and pepper to taste. Ladle into a bowl and garnish with freshly chopped parsley before serving.
