Savory Vietnamese Omelette

Ingredients (Serves 1)

Egg3 large
Chicken Breast70 g
Onion20 g
Bell Pepper30 g
Spring Onion10 g
Fish Sauce1 tbsp
Cooking Oil0.5 tbsp
Black Pepper0.5 tsp

Instructions

Finely mince the chicken breast. Dice the onion and bell pepper. Thinly slice the spring onion.

In a bowl, whisk the eggs with fish sauce and black pepper.

Heat cooking oil in a non-stick pan over medium heat. Add diced onion and bell pepper, sauté for 2 minutes until softened.

Add minced chicken and cook for 2-3 minutes, breaking it apart, until no longer pink.

Pour the egg mixture over the chicken and vegetables. Cook for 2-3 minutes, until the edges set. Gently fold the omelette in half and cook for another minute until cooked through.

Garnish with sliced spring onion and serve immediately.
