Cottage Cheese200 g
Whole Grain Bread60 g
Bell Pepper100 g
Olive Oil7 g
Fresh Oregano5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Preheat your oven or a small pan for roasting the bell pepper. Slice the bell pepper into strips.

Toss bell pepper strips with 1 tsp (approx. 3.5g) of olive oil and a pinch of salt. Roast in the oven at 200°C (400°F) for 10-12 minutes, or pan-roast over medium-high heat until softened and slightly charred.

While the bell pepper roasts, toast the whole grain bread.

In a bowl, combine the cottage cheese. Stir in the remaining 1 tsp (approx. 3.5g) of olive oil, chopped fresh oregano, and a pinch of black pepper.

Once roasted, arrange the bell pepper strips over the cottage cheese. Serve immediately with the toasted whole grain bread on the side.
