Instructions

Dice the chicken breast, bell pepper, zucchini, and onion.

Heat olive oil in an oven-safe skillet over medium heat.

Add chicken and cook until browned, about 5-7 minutes.

Add bell pepper, zucchini, and onion. Cook until softened, about 5-7 minutes.

Stir in cumin, chili powder, salt, and black pepper.

In a bowl, whisk the eggs. Pour the whisked eggs over the chicken and vegetables in the skillet.

Sprinkle grated cheddar cheese evenly over the top.
