Ingredients (Serves 2)

Beef steak (sirloin or flank)223 g
Broccoli florets149 g
Carrots149 g
Bell pepper149 g
Onion149 g
Garlic6 g
Olive oil10 ml
Salt1.5 g
Black pepper1 g

Instructions

Preheat oven to 200°C (400°F).

Chop the broccoli, carrots, bell pepper, and onion into roughly equal-sized pieces. Mince the garlic.

In a large bowl, toss the chopped vegetables and minced garlic with the olive oil, 2g of salt, and 1g of black pepper until evenly coated.

Spread the seasoned vegetables in a single layer on a baking sheet.

Roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.

While the vegetables are roasting, pat the beef steak dry with paper towels. Season generously with the remaining 1g of salt and 1g of black pepper.

Heat a heavy-bottomed pan or cast-iron skillet over medium-high heat until very hot.

Add the seasoned steak to the hot pan and sear for 3-5 minutes per side for medium-rare, or longer for desired doneness. For thicker steaks, you may need to finish in the oven for a few minutes.

Remove the steak from the pan and let it rest on a cutting board for 5-10 minutes before slicing against the grain.

Serve the sliced steak alongside the roasted vegetables.
