Chicken Breast170 g
Brown Rice130 g
Zucchini200 g
Bell Pepper80 g
Onion50 g
Garlic10 g
Ginger5 g
Soy Sauce15 ml
Sesame Oil9 ml
Cornstarch5 g
Water30 ml
Green Onion10 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: If not already cooked, prepare brown rice according to package directions.

Step 2: Dice chicken breast into bite-sized pieces. Season with salt and pepper. Slice zucchini and bell pepper into thin strips. Finely chop onion, garlic, and ginger.

Step 3: In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water to create the stir-fry sauce.

Step 4: Heat a large skillet or wok over medium-high heat. Add the chicken and stir-fry for 3-4 minutes until cooked through and lightly browned. Remove chicken from the pan and set aside.

Step 5: Add the onion, garlic, and ginger to the same pan. Stir-fry for 1 minute until fragrant.

Step 6: Add the zucchini and bell pepper. Stir-fry for 2-3 minutes until vegetables are crisp-tender.

Step 7: Return the cooked chicken to the pan. Pour in the prepared stir-fry sauce and cook for 1 minute, stirring constantly, until the sauce thickens and coats the ingredients.

Step 8: Serve the stir-fry immediately over the cooked brown rice. Garnish with sliced green onion.
