Chicken Broth50 ml
Dried Oregano1 g
Cumin1 g

Corn Tortillas60 g
Cilantro5 g

Instructions

Dice the chicken breast into small pieces (3 minutes). Chop the onion (4 minutes). Mince the garlic (1 minute). Chop the chipotle peppers (2 minutes). Measure out the remaining ingredients (2 minutes). Total Prep: 12 minutes.

Heat the olive oil in a skillet or pot over medium-high heat (1 minute). Add the diced chicken and brown on all sides, about 5 minutes.

Add the chopped onion to the skillet and sauté until softened, about 4 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Add the chopped tomatoes, chipotle peppers, chicken broth, dried oregano, cumin, salt, and pepper (2 minutes). Stir to combine.

Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for 10 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Remove the chicken from the pot and shred it using two forks (2 minutes).

Return the shredded chicken to the sauce and stir to coat. Heat through for 1 minute.

Warm the corn tortillas in a dry skillet or microwave until pliable (2 minutes).

Assemble the tacos by filling the warm tortillas with the chicken tinga mixture. Garnish with fresh cilantro if desired. Total Cook: 1+5+4+1+2+10+2+1+2 = 28 minutes.
