Chicken & Seasonal Vegetable Stir-fry with Brown Rice

- Chicken Breast160 g
- Carrot60 g
- Onion40 g
- Garlic4 g
- Sesame Oil4 ml
- Cabbage90 g
- Soy Sauce12.5 ml
- Ginger2 g
- Vegetable Broth40 ml
Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, prepare vegetables and chicken.

Step 2: Slice chicken breast into thin strips. Mince garlic and ginger. Julienne carrots, thinly slice cabbage and onion.

Step 3: Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 4-5 minutes. Remove chicken from the pan and set aside.

Step 4: Add onion, carrots, and cabbage to the pan. Stir-fry for 3-4 minutes until vegetables are tender-crisp. Add garlic and ginger and cook for 1 minute more until fragrant.

Step 5: Return chicken to the pan. Add soy sauce and vegetable broth, stirring to combine. Cook for 1-2 minutes until sauce slightly thickens.
