Instructions

Slice the chicken breast into thin strips (prep time: 3 minutes).

Slice the bell peppers and onion into thin strips (prep time: 5 minutes).

Mince the garlic (prep time: 1 minute).

In a small bowl, whisk together the lime juice, half of the olive oil (5ml), a pinch of salt, and pepper for the dressing (prep time: 2 minutes). Wash and chop the lettuce and tomatoes (prep time: 4 minutes).

Heat the remaining olive oil (5ml) in a large skillet over medium-high heat (cook time: 1 minute).

Add the chicken strips to the skillet and season with half of the cumin, chili powder, and paprika, plus salt and pepper. Cook, stirring occasionally, until browned and cooked through, about 6-7 minutes (cook time: 7 minutes). Remove chicken from the skillet and set aside.

Add the sliced bell peppers and onion to the same skillet. Add the minced garlic and remaining spices (cumin, chili powder, paprika). Cook, stirring occasionally, until the vegetables are tender-crisp, about 6-7 minutes (cook time: 7 minutes).

Assemble the salad bowl: place the chopped lettuce in a bowl. Top with the cooked chicken and vegetables. Add the black beans, corn, and chopped tomatoes. Drizzle with the lime dressing and garnish with fresh cilantro (assembly time: 5 minutes).
