Chicken & Cabbage Stir-fry with Brown Rice

Ingredients (Serves 1)

Chicken Breast180 g
Brown Rice40 g
Cabbage150 g
Carrot50 g
Onion50 g
Bell Pepper50 g
Soy Sauce15 ml
Ginger5 g
Garlic5 g
Sesame Oil5 g
Olive Oil5 g

Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, prepare vegetables and chicken.

Step 2: Slice chicken breast into thin strips. Shred cabbage, julienne carrot and bell pepper, and thinly slice onion. Mince ginger and garlic.

Step 3: Heat olive oil in a large skillet or wok over medium-high heat.

Step 4: Add chicken strips and stir-fry for 3-4 minutes until lightly browned. Remove chicken from the pan and set aside.

Step 5: Add onion, carrot, bell pepper, ginger, and garlic to the pan. Stir-fry for 3-4 minutes until vegetables start to soften.

Step 6: Add shredded cabbage and continue to stir-fry for 2-3 minutes until it begins to wilt. Return chicken to the pan.

Step 7: Stir in soy sauce and sesame oil. Toss everything to combine and cook for 1 minute more.

Step 8: Serve the stir-fry immediately over the cooked brown rice.
