Chicken Breast with Wild Garlic Pesto Pasta & Cherry Tomatoes

Ingredients (Serves 2)

Chicken Breast125 g
Whole Wheat Pasta60 g
Wild Garlic30 g
Parmesan Cheese7.5 g
Walnut7.5 g
Olive Oil7.5 ml
Cherry Tomato50 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Step 1: Bring a pot of salted water to a boil for pasta. Cook whole wheat pasta according to package instructions until al dente.

Step 2: While pasta cooks, prepare the wild garlic pesto. In a food processor, combine wild garlic, Parmesan cheese, walnuts, and 10ml of olive oil. Blend until a coarse paste forms. Season with salt and pepper.

Step 3: Slice chicken breast into thin strips or bite-sized pieces. Heat remaining 5ml olive oil in a pan over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.

Step 4: Halve the cherry tomatoes.

Step 5: Drain the cooked pasta, reserving a small amount of pasta water. Return pasta to the pot. Add the wild garlic pesto and a splash of reserved pasta water (if needed) to create a creamy sauce. Toss to coat.

Step 6: Stir in the cooked chicken and halved cherry tomatoes. Serve immediately.
