Instructions

Step 1: Cook brown rice according to package instructions. Meanwhile, dice chicken breast into 1-inch pieces. Chop asparagus into 1-inch segments and thinly slice the bell pepper. Mince ginger and garlic.

Step 2: Heat 5ml olive oil in a large pan or wok over medium-high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

Step 3: Add remaining 5ml olive oil to the pan. Add asparagus, bell pepper, minced ginger, and garlic. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
