Chicken & Asparagus Stir-fry with Brown Rice
A quick and flavorful stir-fry featuring lean chicken breast and seasonal asparagus, complemented by crisp bell peppers, ginger, and garlic, served over wholesome brown rice.

- Chicken Breast150 g
- Brown Rice150 g
- Red Bell Pepper75 g
- Fresh Garlic5 g
- Red Bell Pepper75 g
- Sesame Oil5 ml
- Asparagus100 g
- Soy Sauce15 ml
- Fresh Ginger5 g
Instructions

If not pre-cooked, start cooking brown rice according to package instructions (takes about 20-25 minutes).

Slice chicken breast into thin strips. Trim the woody ends off the asparagus and cut into 3-4 cm pieces. Thinly slice the bell pepper. Mince ginger and garlic.

Heat half of the sesame oil in a large wok or frying pan over high heat for 1 minute.

Add chicken strips and stir-fry for 4-5 minutes until browned and mostly cooked through. Remove chicken from the pan and set aside.

Add the remaining sesame oil to the pan. Add asparagus, bell pepper, minced ginger, and garlic. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
