Ingredients (Serves 2)

Chicken breast200 g
Dry brown rice50 g
Bell pepper75 g
Onion50 g
Spinach25 g
Garlic3 g
Fresh ginger5 g
Low-sodium soy sauce (dairy-free)15 ml
Sesame oil5 ml
Olive oil5 ml

Instructions

Cook brown rice according to package directions. Set aside.

Cut chicken breast into bite-sized pieces. Slice bell pepper and onion. Mince garlic and ginger.

Heat olive oil in a large pan or wok over medium-high heat.

Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

Add bell pepper and onion to the pan and stir-fry for 3-4 minutes until slightly softened.

Add garlic and ginger and cook for 1 minute until fragrant.

Return chicken to the pan. Add spinach and stir until wilted.

In a small bowl, whisk together soy sauce and sesame oil. Pour the sauce over the chicken and vegetables and stir to coat.

Serve the stir-fry immediately over the cooked brown rice.
