Ingredients (Serves 2)

Cooked Chicken Breast, diced6 oz
Pasta (dry, dairy-free)2 oz
Frozen Mixed Vegetables0.5 cup
Medium Onion, diced0.3
Garlic, minced1.5 cloves
Olive Oil1 tbsp
Water or Vegetable Broth0.5 cup
Dairy-Free Soy Sauce0.5 tbsp
Salt0.1 tsp
Black Pepper0.1 tsp

Instructions

Cook pasta according to package directions. Drain, reserving about 1/2 cup of the pasta water.

While pasta cooks, heat olive oil in a large skillet over medium heat.

Add diced onion and cook until softened, about 3-4 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add frozen mixed vegetables and cooked diced chicken breast to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp and chicken is heated through.

Add water or vegetable broth and dairy-free soy sauce to the skillet. Bring to a simmer.

Add the drained pasta to the skillet. Toss to coat everything in the sauce.

If needed, add a little reserved pasta water to create a light sauce that coats the pasta.

Season with salt and black pepper to taste.
