Ingredients (Serves 2)

Chicken breast400 g
Dry brown rice160 g
Canned crushed tomatoes400 g
Onion100 g
Garlic10 g
Dried herbs (oregano and basil)5 g
Olive oil20 ml
Salt3 g
Black pepper2 g

Instructions

If using pre-cooked brown rice, skip this step. Otherwise, cook brown rice according to package directions.

Cut chicken breast into bite-sized pieces.

Heat olive oil in a large skillet or pot over medium heat.

Add chopped onion and cook until softened, about 5-7 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add chicken pieces and cook until browned on all sides.

Pour in canned crushed tomatoes, dried herbs (oregano and basil), salt, and pepper.

Bring the sauce to a simmer, then reduce heat and let it cook for 10-15 minutes, or until chicken is cooked through and sauce has thickened slightly.

Divide cooked brown rice between two plates or bowls.
