Chicken Breast175 g
Brown Rice70 g
Asparagus100 g
Spinach75 g
Soy Sauce15 ml
Ginger5 g
Garlic1 clove
Sesame Oil7.5 ml
Olive Oil5 ml

Instructions

Step 1: Cook brown rice according to package instructions. While rice cooks, slice chicken breast into thin strips. Trim the woody ends off the asparagus and cut into 2-inch pieces. Mince the ginger and garlic.

Step 2: In a small bowl, whisk together soy sauce, minced ginger, and minced garlic.

Step 3: Heat olive oil in a large skillet or wok over medium-high heat. Add chicken strips and stir-fry for 3-4 minutes until cooked through. Remove chicken from the pan and set aside.

Step 4: Add asparagus to the same pan and stir-fry for 3-4 minutes until tender-crisp. Add spinach and cook for 1-2 minutes until wilted.

Step 5: Return chicken to the pan. Pour in the soy sauce mixture and sesame oil, tossing to coat everything evenly. Cook for 1 minute more until sauce thickens slightly. Serve immediately over cooked brown rice.
