Beef and Vegetable Pasta Skillet

Ingredients (Serves 2)

Lean Beef (sirloin or flank steak), thinly sliced9 oz
Pasta (dry)3 oz
Medium Onion0.3 cup diced
Garlic1 clove minced
Frozen Mixed Vegetables1 cup
Crushed Tomatoes10 oz
Olive Oil0.8 tbsp
Dried Italian Herbs0.8 tsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Bring a pot of salted water to a boil for the pasta. Cook pasta according to package directions until al dente. Drain, reserving about 1/4 cup of pasta water.

While pasta cooks, slice the lean beef into thin strips.

Heat 0.75 tbsp of olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned on all sides, about 3-4 minutes. Remove beef from the skillet and set aside.

Add the diced onion and minced garlic to the same skillet and cook until softened, about 3-4 minutes.

Stir in the frozen mixed vegetables and cook until tender-crisp, about 5-7 minutes.

Pour in the crushed tomatoes and add the dried Italian herbs, salt, and pepper. Bring the sauce to a simmer.

Return the cooked beef to the skillet with the sauce and vegetables. Stir to combine and heat through.

Add the drained pasta to the skillet. Toss everything together, adding a splash of reserved pasta water if needed to create a light sauce.
