lean beef sirloin/flank steak200 g
sweet potatoes200 g
yellow onion50 g
bell pepper (any color)60 g
garlic10 g
cooking oil10 ml
dried herbs (e.g., rosemary, thyme)2 g
salt1 g
black pepper0.5 g

Instructions

Cut the beef into small, bite-sized cubes.

Peel and dice the sweet potatoes into approximately 1.5 cm cubes.

Dice the yellow onion and bell pepper. Mince the garlic.

Heat cooking oil in a large skillet over medium-high heat. Add the beef cubes and sear on all sides until browned. Remove beef from the skillet and set aside.

Add the diced sweet potatoes, onion, and bell pepper to the same skillet. Cook, stirring occasionally, for 15-20 minutes, or until the sweet potatoes are tender and slightly browned.

Add the minced garlic and dried herbs to the skillet and cook for 1 minute until fragrant.

Return the seared beef to the skillet. Stir to combine with the vegetables.

Season with salt and black pepper to taste. Cook for another 2-3 minutes until the beef is heated through.
