Ingredients (Serves 2)

Dry brown rice80 g
Lean ground beef (90%)150 g
Yellow onion50 g
Garlic5 g
Fresh spinach75 g
Olive oil10 ml
Salt1 g
Black pepper0.5 g

Instructions

Cook the dry brown rice according to package instructions. Keep warm.

Finely dice the yellow onion and mince the garlic.

Heat the olive oil in a large pan or skillet over medium-high heat.

Add the lean ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Add the diced onion and minced garlic to the pan with the beef. Cook until the onion is softened, about 3-4 minutes.

Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

Season the beef and vegetable mixture with salt and black pepper.

Add the cooked brown rice to the pan with the beef and vegetables. Stir well to combine.

Cook for another 2-3 minutes, stirring, until everything is heated through.

Divide the medley between two bowls and serve.
