Beef and Mushroom Stir-fry with Cabbage and Leeks
A flavorful stir-fry combining tender strips of beef with earthy mushrooms and crisp seasonal vegetables like cabbage and leeks, served over rice.
Ingredients
- Beef220 g
- Rice150 g
- Olive Oil10 ml
- Mushrooms150 g
- Cabbage100 g
- Leeks50 g
- Ginger10 g
- Soy Sauce15 ml
Instructions

Cook 150 g of rice according to package instructions (approx. 15-20 minutes). Set aside.

Slice 220 g of beef into thin strips. Slice 150 g of mushrooms. Thinly slice 100 g of cabbage and 50 g of leeks (white and light green parts). Grate 10 g of fresh ginger.

Heat 5 ml of olive oil in a large pan or wok over high heat for 2 minutes until very hot.

Add the beef strips and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.

Add the remaining 5 ml of olive oil to the pan. Add the sliced mushrooms, cabbage, and leeks. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
