Beef and Mushroom Stir-fry with Cabbage and Leeks

Ingredients (Serves 1)

Beef220 g
Mushrooms150 g
Cabbage100 g
Leeks50 g
Ginger10 g
Soy Sauce15 ml
Olive Oil10 ml
Rice150 g

Instructions

Cook 150 g of rice according to package instructions (approx. 15-20 minutes). Set aside.

Slice 220 g of beef into thin strips. Slice 150 g of mushrooms. Thinly slice 100 g of cabbage and 50 g of leeks (white and light green parts). Grate 10 g of fresh ginger.

Heat 5 ml of olive oil in a large pan or wok over high heat for 2 minutes until very hot.

Add the beef strips and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.

Add the remaining 5 ml of olive oil to the pan. Add the sliced mushrooms, cabbage, and leeks. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Add the grated ginger and stir-fry for 1 minute until fragrant.

Return the beef to the pan. Add 15 ml of soy sauce and stir to combine. Cook for another 1-2 minutes until everything is heated through.

Serve the stir-fry over the cooked rice.
