Beef and Mushroom Sauté with Millet

Ingredients (Serves 2)

Beef300 g
Mushrooms300 g
Onion100 g
Garlic10 g
Olive oil20 ml
Beef broth200 ml
Thyme2 g
Millet120 g
Water240 ml
Salt2 g
Pepper1 g

Instructions

Slice the beef thinly against the grain. Slice the mushrooms, chop the onion, and mince the garlic (10 minutes).

Bring the water for the millet to a boil in a small saucepan. Add the millet and a pinch of salt, reduce heat to low, cover, and simmer according to package directions, usually 15-20 minutes (start cooking - 0 minutes).

While the millet cooks, heat olive oil in a large skillet over medium-high heat. Add the beef and sear quickly until browned, about 2-3 minutes. Remove beef from skillet and set aside (3 minutes).

Add the chopped onion and sliced mushrooms to the same skillet. Sauté until the mushrooms have released their liquid and are starting to brown, about 5-7 minutes (7 minutes).

Add the minced garlic and thyme to the skillet and cook for 1 minute until fragrant (1 minute).

Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer (2 minutes).

Return the beef to the skillet and stir to coat. Cook for 1-2 minutes more until beef is heated through (2 minutes). Season with salt and pepper.

Once the millet is cooked and fluffy, divide it between two plates. Top with the beef and mushroom sauté (1 minute).
