Beef and Mushroom Sauté with Millet

- Beef broth200 ml
- Onion100 g
- Garlic10 g
- Olive oil20 ml
- Salt2 g
- Pepper1 g
- Mushrooms300 g
- Thyme2 g
- Millet120 g
- Water240 ml
Instructions

Slice the beef thinly against the grain. Slice the mushrooms, chop the onion, and mince the garlic (10 minutes).

Bring the water for the millet to a boil in a small saucepan. Add the millet and a pinch of salt, reduce heat to low, cover, and simmer according to package directions, usually 15-20 minutes (start cooking - 0 minutes).

While the millet cooks, heat olive oil in a large skillet over medium-high heat. Add the beef and sear quickly until browned, about 2-3 minutes. Remove beef from skillet and set aside (3 minutes).

Add the chopped onion and sliced mushrooms to the same skillet. Sauté until the mushrooms have released their liquid and are starting to brown, about 5-7 minutes (7 minutes).
