Beef and Broccoli Stir-fry with Cauliflower Rice
A hearty and satisfying low-carb Japanese-inspired stir-fry featuring tender slices of beef, crisp broccoli, and fresh spinach, served over fluffy cauliflower rice, seasoned with a savory ginger-garlic sauce and crunchy cashews.
Ingredients
- Beef225 g
- Spinach150 g
- Broccoli100 g
- Garlic1 clove
- Olive Oil15 ml
- Cauliflower300 g
- Cashew20 g
- Soy Sauce15 ml
- Ginger1 cm
Instructions

Slice beef thinly against the grain. In a bowl, toss beef with half of the soy sauce and minced garlic and ginger. Set aside.

Cut cauliflower into florets and pulse in a food processor until it resembles rice grains. Alternatively, use a grater.

Heat half of the olive oil in a large wok or skillet over high heat. Add the beef and stir-fry quickly until browned, about 3-4 minutes. Remove beef from the wok and set aside.

Add the remaining olive oil to the wok. Add broccoli florets and stir-fry for 3-4 minutes until tender-crisp. Add the cauliflower rice and stir-fry for another 3-4 minutes until heated through and slightly softened.

Return the beef to the wok. Add spinach and cashews, stirring until spinach is wilted, about 1-2 minutes. Stir in the remaining soy sauce.
