Lean Beef Sirloin/Flank Steak267 g
Brown Rice (dry)73 g
Broccoli Florets133 g
Carrots67 g
Snow Peas67 g
Yellow Onion50 g
Garlic10 g
Fresh Ginger7 g
Soy Sauce (or Tamari)20 ml
Rice Vinegar10 ml
Toasted Sesame Oil5 ml
Cornstarch5 g
Water20 ml
Cooking Oil (e.g., vegetable or avocado)7 ml

Instructions

Cook the brown rice according to package instructions. Set aside.

Slice the beef thinly against the grain into strips.

Prepare the vegetables: Cut broccoli into florets, slice carrots thinly, trim snow peas, thinly slice the yellow onion, mince the garlic, and grate the fresh ginger.

In a small bowl, whisk together the soy sauce (or tamari), rice vinegar, toasted sesame oil, cornstarch, and water. Set aside.

Heat 10 ml of cooking oil in a large wok or skillet over high heat until very hot.

Add the beef strips in a single layer (cook in batches if necessary to avoid crowding the pan). Sear for 1-2 minutes per side until browned. Remove beef from the pan and set aside.

Add the remaining 10 ml of cooking oil to the pan. Add the sliced onion and cook until slightly softened, about 2 minutes.

Add the minced garlic and grated ginger and cook for 30 seconds until fragrant.

Add the broccoli and carrots to the pan. Stir-fry for 3-4 minutes until vegetables are slightly tender-crisp.

Add the snow peas and stir-fry for another 1-2 minutes.

Return the cooked beef to the pan. Stir the sauce mixture and pour it over the beef and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.

Serve the beef and vegetable stir-fry hot over the cooked brown rice.
