Ingredients (Serves 2)

Lean Beef (sirloin or flank steak), thinly sliced7 oz
Cooked Rice0.8 cup
Broccoli Florets1.5 cup
Dairy-Free Soy Sauce (check label)2 tbsp
Rice Vinegar0.5 tbsp
Maple Syrup or other dairy-free sweetener0.5 tbsp
Sesame Oil0.5 tsp
Garlic, minced0.5 clove
Ginger Powder0.3 tsp
Olive Oil or Vegetable Oil0.5 tbsp
Cornstarch (optional, for thickening sauce)0.5 tsp

Instructions

Slice the beef thinly against the grain.

In a bowl, combine the beef slices with 1 tablespoon of the soy sauce, the rice vinegar, half of the minced garlic, and ginger powder. Marinate for at least 10 minutes while you prepare the vegetables.

Prepare the broccoli florets. If using fresh, you can blanch them quickly in boiling water for 1-2 minutes, then shock in ice water to keep them crisp-tender, or steam them.

In a small bowl, whisk together the remaining 1 tablespoon soy sauce, maple syrup, sesame oil, and the remaining minced garlic. If thickening, whisk in cornstarch with 1-2 tablespoons of water.

Heat olive oil or vegetable oil in a large skillet or wok over high heat.

Add the marinated beef to the hot skillet in a single layer (cook in batches if necessary to avoid crowding). Sear the beef for 1-2 minutes per side until browned. Remove beef from the skillet and set aside.

Add the broccoli florets to the same skillet (add a splash more oil if needed). Stir-fry for 3-5 minutes until tender-crisp.

Return the beef to the skillet. Pour the sauce mixture over the beef and broccoli. Stir well to coat everything.

Cook for another 1-2 minutes, stirring, until the sauce thickens slightly (if using cornstarch) and everything is heated through.

Divide the cooked rice into two bowls. Spoon the beef and broccoli mixture over the rice.
