Chicken Breast9 ounce
Tomato1 large
Cucumber1 cup
Red Onion0.3 cup
Olive Oil1 tablespoon
Balsamic Vinegar2 tablespoon
Fresh Basil0.3 cup
Whole Wheat Pita Bread1 large
Salt0.5 tsp
Black Pepper0.3 tsp
Garlic Powder0.5 tsp

Instructions

Step 1: Pat chicken breast dry and season with salt, pepper, and garlic powder.

Step 2: Heat a grill pan or skillet over medium-high heat. Cook chicken for 6-8 minutes per side, or until internal temperature reaches 165°F (74°C). During the last 2 minutes, brush chicken with 1 tablespoon of balsamic vinegar.

Step 3: While chicken cooks, dice the tomato, cucumber, and thinly slice the red onion. Roughly chop the fresh basil.

Step 4: In a bowl, combine diced tomato, cucumber, red onion, and chopped basil. Drizzle with the remaining 1 tablespoon of balsamic vinegar and olive oil. Toss gently to combine.

Step 5: Slice the cooked chicken breast. Serve the sliced chicken alongside the Mediterranean salad and a whole wheat pita bread.
