Baked Trout with Roasted Root Vegetables

Ingredients (Serves 1)

Trout fillet, skin on200 g
Carrots150 g
Kohlrabi200 g
Onion50 g
Garlic5 g
Olive oil20 ml
Fresh thyme3 g
Fresh parsley, for garnish5 g
Lemon wedge, for serving1 g
Salt2 g
Black pepper1 g

Instructions

Preheat oven to 200°C.

Peel and chop carrots and kohlrabi into bite-sized pieces (approx. 2-3 cm). Thinly slice the onion and garlic.

Toss the chopped vegetables, onion, and garlic with 15 ml olive oil, fresh thyme, salt, and pepper on a baking tray.

Roast for 15 minutes.

Pat the trout fillet dry. Rub with the remaining 5 ml olive oil, sprinkle with salt and pepper.

Remove the tray from the oven, push vegetables to one side, and place the trout fillet on the tray.

Return to the oven and bake for another 12-15 minutes, or until the trout is cooked through and flakes easily.

Serve the baked trout alongside the roasted vegetables, garnished with fresh parsley and a lemon wedge.
