Baked Salmon with Roasted Sweet Potato and Green Beans

- Sweet Potato270 g

Instructions

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Peel and dice the sweet potato into 1.5 cm (0.5 inch) cubes. Trim the ends of the green beans.

On the prepared baking sheet, toss the sweet potato cubes and green beans with 10g of olive oil, half of the garlic powder, paprika, salt, and black pepper. Spread them in a single layer.

Roast for 10 minutes. While vegetables roast, pat the salmon fillet dry. Rub it with the remaining 5g of olive oil, garlic powder, paprika, salt, and black pepper.

After 10 minutes, add the salmon fillet to the baking sheet with the vegetables. Continue to roast for another 10-12 minutes, or until salmon is cooked through and flakes easily, and vegetables are tender-crisp. Adjust cook time slightly for desired salmon doneness.
