Baked Mackerel with Sautéed Kohlrabi and Barley
A light and flavorful lunch featuring omega-3 rich baked mackerel, served alongside tender sautéed seasonal kohlrabi and nutty barley.

- Barley60 g
- Water350 ml
- Kohlrabi200 g
- Mackerel150 g
- Dill1 g
Instructions

Preheat oven to 200°C (400°F) (5 minutes).

Rinse 60 grams of barley under cold water (1 minute). Bring 300 ml of water or vegetable broth to a boil in a saucepan (3 minutes). Add the barley, reduce heat, cover, and simmer for 25-30 minutes, or until tender. Drain excess liquid if needed (1 minute).

While barley cooks, prepare the kohlrabi and mackerel. Peel 200 grams of kohlrabi and cut it into thin matchsticks or small cubes (5 minutes). Thinly slice 30 grams of onion (2 minutes).

Place 150 grams of mackerel fillet on a small baking dish lined with parchment paper. Drizzle with 5 ml of olive oil, season with salt, pepper, and a pinch of dried dill or parsley (2 minutes).

Bake the mackerel in the preheated oven for 12-15 minutes, or until cooked through and flakes easily with a fork (15 minutes).
