Baked Cod with Sautéed Potatoes and Cabbage

Instructions

Preheat oven to 200°C (390°F). Line a baking sheet with parchment paper.

Pat cod fillets dry, season with salt, pepper, and a squeeze of lemon juice. Place on the baking sheet and bake for 8-10 minutes, or until fish flakes easily with a fork.

While fish bakes, peel and dice potatoes into small cubes. Thinly slice savoy cabbage and onion.

In a large pan, heat half of the olive oil over medium-high heat. Add potatoes and cook for 5-7 minutes, stirring occasionally, until tender-crisp. Remove from pan.

Add remaining olive oil to the same pan. Add sliced cabbage and onion, sauté for 3-5 minutes until softened. Season with salt and pepper.
